Distillation refers to the system to produce distilled liquors. It is introduced with Publish 70.4 and only available through Rustic Theme Pack. In order to produce alcoholic beverages through distillation, you first need a 
Distillery. Double-clicking on the Distillery will open a menu where you can select different types and groups of liquors:
